Asparagus Vinaigrette
Prep Time: 15 minutes / Cook Time: 10 minutes / Yields: 2 servings
Ingredients
1 pound asparagus spears, trimmed
Red leaf lettuce
¼ cup chopped Sun-Dried Tomato Halves
¼ cup olive oil
⅛cup balsamic vinegar
½ tsp minced garlic
Salt and pepper to taste
Instructions
Step one
Add all ingredients to a food processor. Pulse quickly 10-15 times until all of the ingredients are well combined and the mixture becomes crumbly. Do not process continuously, it should stick together and separate easily into a chunky consistency. Adjust salt and lemon juice to taste.
Step two
Add to a dish of your choice or store in the refrigerator for up to a week.
