Breakfast Tostada

Prep Time: 10 minutes / Cook Time: 15 minutes / Yields: 6 servings

California Sun Dry

Ingredients

6 tostada shells
1 (15oz) can refried beans with green chiles and lime
6 eggs
¾ cup Sun-Dried Tomato Salsa
1 ½ cup shredded Mexican blend cheese
½ cup chopped green onion
1 avocado, peeled and sliced
½ cup chopped cilantro leaves

Instructions

Step 1
Preheat the oven to 400 degrees and place tostada shells on a large baking sheet. Cook for 5 minutes to crisp and remove from the oven.

Step 2
Heat beans in a saucepan or microwave until hot. Spread an equal amount of beans on tostada shells. Top with 1 tbsp sun-dried tomato salsa.

Step 3
Fry or poach eggs in a non-stick skillet and place each one on top of beans and salsa. Top with ¼ cup of cheese and 1 more tbsp sun-dried tomato salsa.

Step 4
Broil for 1 to 2 minutes and serve with onion, avocado slices and chopped cilantro leaves.
