Chicken Tortilla Pie

Prep Time: 5 minutes / Cook Time: 20 minutes / Yields: 4-6 servings

Ingredients

1 medium onion, chopped
1 tsp ground cumin
2 poblano peppers, seeded & chopped
1 tsp Sun-Dried Tomato Garlic
1, 18.8 oz can Campbell’s Chunky Chicken Corn Chowder Soup
2 cup frozen corn, thawed
2 1/2 cups cooked shredded chicken
1/4 cup fresh lime juice
1 cup Julienne Cut Sun-Dried Tomatoes, drained
2 cups fresh cilantro, chopped
1 cup tortilla chips pieces
1 oz pepper jack cheese, grated

Instructions

Step 1
Heat large skillet, medium, heat oil. Add onion and cook, cover and stir often 5 minutes. Stir in cumin, add peppers and sun-dried tomato garlic. Cook, cover and stir often, 5 minutes. Heat broiler.

Step 2
Add soup and corn. Cook, stirring, 2-3 minutes. Add chicken and cook 2 minutes. Remove from heat; add lime juice, sun-dried tomatoes, and cilantro.

Step 3
Transfer mix to a greased, 8 x 8” casserole dish. Sprinkle with chips, then cheese, and broil until cheese melts and bubbles, 1-2 minutes.
