Chickpea Salad

Prep Time: 15 minutes / Cook Time: 20-30 minutes / Yields: 2 servings

Ingredients

5 oz. mixed greens
1 can chickpeas (garbanzo beans)
1 bag of Julienne Cut Sun-Dried Tomatoes
Olive Oil
1 tsp paprika
½ tsp chili powder
Generous pinch of salt

Instructions

Step 1
Preheat the oven to 425° and drain and rinse your chickpeas

Step 2
Spread the chickpeas on a kitchen towel and gently pat them dry.

Step 3
Transfer the chickpeas to a parchment-lined baking sheet and toss them with a drizzle of olive oil and generous pinches of sea salt. Spread evenly on the baking sheet.

Step 4
Transfer the baking sheet to your preheated oven and roast until crispy. Start checking at 20 minutes, but it can take up to 30 minutes for them to become really crisp.

Step 5
Remove from the oven and, while the chickpeas are still warm, toss with paprika and chili powder.

Step 6
Combine fresh mixed greens with sun-dried tomatoes and your favorite salad dressing

Step 7
Top with the crispy garbanzo beans.
