Chickpea Spread

Prep Time: 10 minutes / Cook Time: 0 minutes / Yields: 3-4 servings

California Sun Dry

Ingredients

1 15-ounce can of chickpeas, drained and rinsed
1/2 cup chopped Sun-Dried Tomato Halves
2 tbsps pitted black olives, thinly sliced
1 tbsp red onion, finely chopped
1 tbsp fresh parsley, chopped
Zest and juice from half a lemon
Couple pinches of salt and black pepper, to taste
A few dashes of olive oil
6-8 slices of bread, preferably a durable bread like sourdough

Instructions

Step 1
Mix everything but the olive oil in a bowl. Very lightly smash the chickpea mixture with the back of a fork or a potato masher.

Step 2
Taste and adjust seasonings as needed, a couple dashes of olive oil and mix it lightly.

Step 3
Spoon onto toasted bread and enjoy!
