Garlic Roasted Red Potatoes

2 lbs red potatoes with skins, cut into wedges
1 tbsp minced garlic
3 tsp olive oil, divided
Freshly ground pepper
½ tsp salt
2 tbsp of California Sun Dry Julienne Cut Sun-Dried Tomatoes

Step 1
Heat oven to 450 degrees. Lightly oil a baking tray with 1 tsp olive oil.

Step 2
In a large bowl, mix together potato wedges, olive oil, and salt until well coated. Spread potato mixture onto tray in one layer and sprinkle with pepper.

Step 3
Bake for 20 minutes and remove from the oven. Add garlic and California Sun Dry Julienne Cut Sun-Dried Tomatoes and stir in. Return to the oven and cook for another 10 minutes.

Step 4
Remove potatoes from the oven and stir again. Place back into the oven for an additional 10 minutes or until the potatoes are cooked through and crispy.
