Italian Meatloaf

Prep Time: 10 minutes / Cook Time: 60 minutes / Yields: 6-8 Servings

California Sun Dry

Ingredients

2 lbs ground beef chuck
1 lb sweet Italian sausage, casings removed
1 medium yellow onion, chopped
2 tbsp Sun-Dried Tomato Garlic
3 cups fresh breadcrumbs
1 cup flat leaf parsley, chopped
2 tbsp Italian seasonings
2 cup fresh basil leaves, chopped
4 oz Sun-Dried Tomato Halves, drained, minced
Salt and pepper, to taste
2 eggs, lightly beaten
1/2 cup tomato juice
1/2 cup dry red wine
1/4lb smoked mozzarella, thinly sliced

Instructions

Step 1
Combine first ten ingredients in a large bowl. Add the eggs, tomato juice and wine, mix thoroughly.

Step 2
Place on aluminum foil lined baking sheet and form into a loaf. Bake for 1 hour at 375°. Place sliced cheese on top. Bake until melted and bubbly. Serve hot or cold.
