Karen Walker’s Salad

Prep Time: 10 minutes / Cook Time: 10 minutes / Yields: 2 servings

California Sun Dry

Ingredients

3 cups of lettuce
Vinaigrette of choice
2 oz crumbled goat cheese
¼ cup Julienne Cut Sun-Dried Tomatoes, in oil
1 tbsp pine nuts

Instructions

Step 1
Heat oven to 325 degrees and toast pine nuts for about 10 minutes.

Step 2
In a large bowl, toss lettuce with salad dressing until lightly coated.

Step 3
Top lettuce with goat cheese and sun-dried tomatoes, toss again.

Step 4
Place roasted pine nuts on top and enjoy.
