Loaded Grilled Cheese

Prep Time: 10 minutes / Cook Time: 6 minutes / Yields: 2 sandwiches

California Sun Dry

Ingredients

4 slices sourdough bread
1 lb. fresh mozzarella, ¼” slices
2 fresh tomatoes, sliced thick
1 (8.5 oz.) jar Sun-Dried Tomato Pesto
Salt & pepper
Extra virgin olive oil

Instructions

Step 1
Heat a Panini press on medium heat.

Step 2
Spread sun-dried tomato pesto on all 4 slices of bread. Arrange tomato slices on 2 slices of bread. Season with salt and pepper. Layer the mozzarella slices over tomatoes and place the remaining 2 bread slices, pesto side down, on top to make the sandwich.

Step 3
Drizzle oil on Panini press, place sandwiches inside and press. Turn after 2-3 minutes and remove when golden brown and cheese has melted.

Optional
Add baby arugula or fresh spinach, thinly sliced and cooked meat, prosciutto, sliced onion or sliced pear.
