Mediterranean Quinoa Salad

Prep Time: 10 minutes / Cook Time: 20 minutes / Yields: 4 servings

California Sun Dry

Ingredients

2 cups cooked quinoa
½ cup Sun-Dried Tomato Halves, chopped
¼ of a red onion, chopped
1 cucumber, diced
Feta
Parsley

For the dressing
2 tbsp olive oil
2 tbsp lemon juice
2 cloves garlic, minced
1 tsp dijon mustard

Instructions

Step 1
Whisk together dressing ingredients, season to taste with salt and pepper.

Step 2
Combine quinoa, sun-dried tomatoes, onion and cucumber in a bowl.

Step 3
Drizzle dressing over salad and toss to combine. Top with crumbled feta and parsley.
