Mediterranean Salad with Sun-Dried Tomato Vinaigrette

Ingredients
6 tbsp olive oil
2 tbsp Julienne Cut Sun-Dried Tomatoes, in oil
4 tsp apple cider vinegar
1 garlic clove
¼ tsp sea salt
⅛ tsp freshly ground black pepper
2 cups halved grape tomatoes
2 cups chopped cucumber
1 cup chopped artichoke hearts
⅓ cup thinly sliced red onion
½ cup crumbled feta cheese

Step 1
In a food processor or blender, puree olive oil, California Sun Dry Julienne Cut Sun-Dried Tomatoes, apple cider vinegar, garlic, sea salt and black pepper until smooth. If the mixture is too thick, you can add small amounts of oil or water until you reach the desired consistency.
Step 2
In a large bowl, combine tomatoes, cucumber, artichoke hearts, and onion. Toss with blended vinaigrette just before serving.
Step 3
Sprinkle with feta cheese and enjoy!
