Pasta and Bean Soup

Prep Time: 20 minutes / Cook Time: 40 minutes / Yields: 6 servings

California Sun Dry

Ingredients

¼ cup olive oil
1 onion, minced
2 carrots, in small dice
4 cloves garlic, minced
¼ cup minced Sun-Dried Tomato Halves
2 cans (15oz) white beans, drained
3 cups chicken broth mixed with 3 cups water
1 tsp dried rosemary
2 tbsp minced parsley
⅓lb fresh fettuccine, cut into 3-inch lengths
Salt and pepper

Instructions

Step 1
Heat oil in a large pot. Add onion, carrot, celery and garlic. Saute until the veggies are tender. Add sun-dried tomatoes and saute for an additional 3 minutes.

Step 2
Add beans, broth-water mixture, and rosemary. Bring to a simmer and cover for 15 minutes.

Step 3
In a food processor, puree half of the soup. Return puree to pot.

Step 4
Stir in parsley, salt and pepper. Return to a simmer.

Step 5
Add fettuccine and cook until al dente.
