Shrimp Scampi

Prep Time: 10 minutes / Cook Time: 25 minutes / Yields: 4 servings

Ingredients

3 tbsp Sun-Dried Tomato Garlic
5 tbsp olive oil
1 tsp red pepper flakes
Kosher salt & freshly ground black pepper
¾ lb medium shrimp, peeled, deveined & butterflied, (keep shells)
2 lemons, separately zest & juice
¼ onion, peeled & rough chopped
¾ lb thin linguini
2 tbsp butter
1 small bunch parsley leaves, chopped

Instructions

Step 1
In a bowl, combine shrimp, garlic, olive oil, red pepper flakes, salt, pepper, and the zest and juice of 1 lemon, set aside. In a small pot, combine shells and onion, cover with water, bring to a boil, reduce heat, cover and cook 20 minutes.

Step 2
Bring a large pot of heavily salted water to boil, add linguine and cook 2 minutes less than recommended. Drain and reserve 1 cup of pasta water.

Step 3
Drain shrimp and reserve marinade. Heat a skillet over high heat and add drained shrimp. Cook until just pink, about 3 minutes. Remove to a plate. To skillet, add marinade, 1 cup of shrimp stock, 1/2 cup of pasta water and cook until reduced by half. Add the remaining zest, lemon juice, butter and parsley, stir to combine. Taste and adjust seasonings. Toss pasta, sauce and shrimp together. Sprinkle parsley over and serve immediately.
