Shrimp & Texas Sun-Dried Tomato Sauce

Prep Time: 5 minutes / Cook Time: 15 minutes / Yields: 2-4 Servings

California Sun Dry

Ingredients

½ cup Sun-Dried Tomato Halves
¼ cup chopped onion
2 tsp Sun-Dried Tomato Garlic
2 tsp light brown sugar
1 tbsp Sun-Dried Tomato Spread
½ tsp cayenne pepper
2 tbsp red wine vinegar
¼ cup water + 3 tbsp water
Salt & freshly ground black pepper
½ lb jumbo shrimp, shelled & deveined
Olive oil spray

Instructions

Step 1
Place first seven ingredients in a small saucepan and bring to a simmer. Cover and gently simmer for about 10 min, remove and cool for 5 minutes.

Step 2
Puree in a food processor and add ¼ cup water as processing. Add salt and pepper to taste. Toss about 1/3 of the sauce with the shrimp, coat well.

Step 3
Preheat the oven to broil. Line a baking tray with foil and lightly spray with olive oil spray. Spread shrimp on tray in one layer and broil 3 minutes, turning once, until just pink. Add 3 tbsp water to remaining sauce and serve in a bowl as dipping sauce.
