Smoked Sun-Dried Tomato Egg Salad

Prep Time: 15 minutes / Cook Time: 15 minutes / Yields: 4 servings

California Sun Dry

Ingredients

6 eggs
¼ cup grated sharp cheddar cheese
½ cup mayonnaise
¼ cup Smoked Julienne Cut Tomatoes, chopped
¼ tsp kosher salt
⅛ tsp freshly ground black pepper
¼ cup fresh chives, chopped

Instructions

Step 1
Hard boil all 6 eggs. Once cooked, drain and cover with ice cubes and cold water. Allow to cool.

Step 2
After cooling, peel eggs and separate egg whites from yolks. Move egg whites to a food processor and pulse until small.

Step 3
Add cheddar, mayonnaise, egg yolks, and salt and pepper to the food processor. Once everything is fully combined, mix in chopped sun-dried tomatoes.

Step 4
Scoop mixture into a plastic bag or a piping bag fitted with a smooth tip and pipe onto your serving method of choice. Garnish with chopped chives.

Step 5
Serve chilled or at room temperature.
