Southwest Breakfast Burrito

8 eggs, beaten
2 cups black beans
Baby spinach

1 cup shredded cheddar cheese
1 cup Sun-Dried Tomato Halves, sliced

Step 1
Scramble eggs in a skillet and set aside. In the same skillet cook beans and spinach, adding salt and pepper for taste. Remove from heat.
Step 2
Assemble burrito by placing tortilla on a cutting board. Add egg and bean/spinach mix to the bottom third of the tortilla, top with California Sun Dry Sun-Dried Tomato Halves and cheese.
Step 3
Roll the sides of the tortilla into the center and roll up the tortilla, ending with the seam side down.
