Summer Salad

California Sun Dry

Ingredients

Romaine lettuce, chilled
1 cups cannellini beans, canned, rinsed & patted dry
1 avocado, divided in half
1/3 cup Julienne Cut Sun-Dried Tomatoes, chopped
1/3 cup extra virgin olive oil
2 tbsp red wine vinegar
1 tsp black sesame seeds

Instructions

Step 1
For a single serving, tear lettuce into a salad bowl & arrange to the side. Place one half of the avocado next to the lettuce.

Step 2
Strain the can of beans & rinse well under running water. With a paper towel, pat dry the excess water & place next to the avocado.

Step 3
Sprinkle the lettuce leaves with the sun-dried tomatoes & sprinkle all with olive oil, then the vinegar.

Step 4
Add the sesame seeds on top of the avocado & serve.
