Sun-Dried Tomato and Parmesan Egg Bites

Ingredients

⅓ cup Sun-Dried Tomato Halves, drained from oil
1 cup Parmesan Cheese
½ Ricotta
¼ cup Feta
6 eggs
Salt and pepper
Scallions

Instructions

Step 1
Combine everything together in one bowl. Then whisk.

Step 2
Meanwhile, spray a muffin tin with cooking spray.

Step 3
Fill each with ¼ cup of egg mixture. Bake at 400 degrees for 15-17 minutes, until light golden brown, puffed up, and eggs spring back when pressed lightly in the center.

Step 4
Serve right away or store in the fridge or freezer to make your morning breakfast routine quick and easy.
