Sun-Dried Tomato Chicken Skillet

Prep Time: 5 minutes / Cook Time: 15 minutes / Yields: 5 servings

California Sun Dry

Ingredients

1 lb. chicken thighs
2 tablespoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper

For the sauce
2 tablespoon olive oil
4 garlic cloves minced
1/4 cup Sun-Dried Tomato Halves, sliced
3/4 cup parmesan cheese
1 cup milk of choice
1/2 cup water
fresh basil for garnish

Instructions

Step 1
Mix Italian seasoning, salt and pepper together and pour onto a large plate. Coat each chicken thigh with seasoning, then place directly into a large skillet (I used my cast iron skillet).

Step 2
Sear the chicken for 6-7 minutes per side, or until chicken is cooked all the way through. You may need to add 1 tablespoon oil to the skillet. Once chicken is cooked, use kitchen tongs to remove chicken.

Step 3
In that same skillet, combine all of the sauce ingredients and reduce heat to medium-low, stirring for a few minutes until cheese has melted. Simmer mixture for 5 minutes or so, which will allow it to thicken. Place chicken back in skillet and top it with fresh basil.
