Sun-Dried Tomato & Corn Salad

Prep Time: 15 minutes / Cook Time: 0 minutes / Yields: 4-6 servings

California Sun Dry

Ingredients

4 cups fresh or frozen corn kernels
1 cup diced red pepper
⅔ cup finely dice red onion
½ cup chopped Julienne Cut Tomatoes, drained with oil reserved
½ cup fresh parsley, chopped
2 tbsp mayonnaise
2 tbsp plain yogurt
2 tbsp white wine vinegar
2 tbsp reserved olive oil
Salt & pepper to taste

Instructions

Step 1
Blanch fresh corn kernels and rinse in cold water, if using fresh. If using frozen, defrost and drain well.

Step 2
Combine corn, red pepper, onion, sun-dried tomatoes, and parsley in a medium-sized bowl. In a small bowl, combine mayonnaise, yogurt, vinegar, and oil.

Step 3
Pour over salad and toss to coat. Season with salt and pepper. Cover and refrigerate for several hours before serving.
