Sun-Dried Tomato Deviled Eggs

Prep Time: 15 minutes / Cook Time: 9 minutes / Yields: 12 servings

California Sun Dry

Ingredients

6 eggs
¼ cup grated, then chopped, sharp cheddar
¼ cup mayonnaise
¼ cup Smoked Julienne Cut Tomatoes, chopped
¼ tsp kosher salt
1/8 tsp freshly ground black pepper
¼ cup fresh parsley, chopped

Instructions

Step 1
Put eggs into a 4-qt pot of cool water and bring to a boil. Remove pan from heat and cover for 7-9 minutes.

Step 2
Drain the eggs and cover with ice cubes and cold water. Allow to cool for 3-5 minutes. Once cooled, remove the eggs from the cold water to be dried off and cracked. Cut each egg in half.

Step 3
Using a small spoon, transfer yolks to a medium bowl and break up with a fork. Add cheddar, mayonnaise, chopped sun-dried tomatoes, salt and pepper. Stir thoroughly.

Step 4
Scoop mixture into a plastic bag (or a piping bag fitted with a smooth tip) and pipe the mixture into the egg whites.

Step 5
Garnish with chopped parsley and serve chilled or at room temperature.
