Sun-Dried Tomato Risotto

Ingredients

5 tbsp butter
Olive oil
1/2 white onion, diced
4 cloves garlic, minced
2 cups arborio rice
1 cup dry white wine
1 cup Sun-Dried Tomato Halves
1 3/4 cups grated Parmesan cheese
4 cups chicken broth
¼ cup heavy cream
Salt and pepper
Basil

Instructions

Step 1
Heat olive oil and butter in a large saucepan.

Step 2
Pour diced onion, garlic gloves, and rice into saucepan. Stir until combined and cook for 3 minutes, stirring occasionally. Add in wine and California Sun Dry Sun-Dried Tomato Halves, cooking until most of the liquid is absorbed.

Step 3
Add broth ¼ cup at a time, making sure to stir until liquid is absorbed each time. Repeat until the rice is done.

Step 4
Remove from heat and stir in heavy cream and Parmesan cheese. Adjust seasoning to taste and top with fresh basil. Enjoy!
