1 jar Julienne Cut Sun-Dried Tomatoes, Packed in Oil
2 lbs gnocchi
1 tsp olive oil
2 garlic cloves, minced
1 1/2 cups vegetable stock
1 tbsp flour
2/3 cup heavy cream
1/2 cup parmesan cheese, grated
8 oz mozzarella cheese, sliced
Basil
Crushed red pepper
Instructions
This sun-dried tomato gnocchi is a vibrant and flavorful gourmet dish ready for any weeknight dinner. This sauce not only enhances the taste of the gnocchi, but also is a recipe sure to impress and satisfy!
Step 1
Drain your jar of Julienne Cut California Sun Dry Sun-Dried Tomatoes from the oil. Then dump the tomatoes onto a paper towel and press out the oil to remove it, then dice the tomatoes.
Step 2
Cook the gnocchi according to the package directions.
Step 3
Heat olive oil in a large oven-safe skillet over medium-low heat. Add the diced sun-dried tomatoes and 2 garlic cloves with a pinch of salt and pepper. Cook for 2-3 minutes, or until softened.
Step 4
Pour in the vegetable stock and flour into a cup and shake until combined. Pour this mixture into the pan and stir.
Step 5
Add in heavy cream and parmesan. Stir until combined. Then, add in your cooked gnocchi.
Step 6
Top with mozzarella and bake in the oven at 400F for 22 minutes.
Step 4
Top with basil and red pepper flakes and enjoy!
