Marry Me Cauliflower
Prep Time: 15 minutes / Cook Time: 25 minutes / Yields: 6 servings
Ingredients
2 lbs cauliflower, cut into smaller pieces
1/3 cup California Sun Dry Julienne Cut Sun-Dried Tomatoes, Packed in Oil
3 garlic cloves, minced
1/3 cup flour
1 3/4 chicken broth
1/2 cup heavy whipping cream
1 tsp Italian seasoning
1/2 tsp red pepper flakes
1/2 cup parmesan, grated
1 cup spinach
salt & pepper
4 tbsp olive oil
basil, thinly chopped for garnish

Step 1
Coat cauliflower in flour and shake off excess. Heat olive oil in a skillet, place cauliflower in the pan, and season with salt and pepper. Cook cauliflower in pan for 3-4 minutes or until slightly browned on each side.
Step 2
Take cauliflower out of the pan and set to the side. Add a bit more olive oil and garlic to the pan and cook for about 30 seconds. Add broth, heavy cream, California Sun Dry Julienne Cut Sun-Dried Tomatoes, Italian seasoning, red pepper flakes, and parmesan cheese. Stir to combine together, then bring to a boil. Turn down heat and let simmer for 2 minutes.
Step 3
Add cauliflower to the pan and stir. Cover the pan and let simmer for 5 more minutes.
Step 4
Remove cover, add spinach and cover again. Let simmer for another 1-2 minutes or until the spinach looks wilted.
Step 5
Turn off heat and garnish with basil.
