Step 1
Cook the chicken. Heat olive oil in a large skillet over medium-high heat. While that is heating, pound and cut the fat off your chicken. Season your chicken generously with salt and pepper. Place the chicken in the skillet and cook for about 5 minutes on each side. Place cooked chicken on a plate and set aside.
Step 2
In the same skillet you just used, heat more olive oil. Add garlic, thyme, and red pepper flakes to the skillet and cook for 1 minute.
Step 3
Stir in chicken broth, heavy cream, California Sun Dry Julienne Cut Sun-Dried Tomatoes, parmesan, and salt. Bring this to a simmer and then put your cooked chicken back in the skillet and cook for about 5 more minutes.
Step 4
To serve, spoon sauce over chicken and top with parsley.
