Shrimp Scampi With Sun Dried Tomatoes

Prep Time: 10 minutes / Cook Time: 30 minutes / Yields: 4 servings

California Sun Dry

Ingredients

1 lb shrimp, peeled
4 cloves garlic, minced
1/4 tsp red pepper flakes
1/2 cup white wine
1 jar California Sun Dry Julienne Cut Sun-Dried Tomatoes, Packed in Oil
2 tbsp oil from sun dried tomato jar
Juice from 1 lemon
Zest from 1 lemon
3 tbsp butter
1/4 cup parsley, chopped
Angel hair pasta
Parmesan, freshly grated
Salt and pepper

Instructions

Shrimp Scampi is a dish that never disappoints, especially when you add our sun-dried tomatoes!

Step 1
Boil water and cook pasta according to instructions on box. Set aside 1/2 cup pasta water.

Step 2
In a large skillet, over medium heat, heat 1 tbsp oil. Cook the shrimp for 1-2 minutes on each side and season with salt and pepper.

Step 3
In the same skillet, add another tbsp of oil and cook the garlic. Add red pepper flakes and California Sun Dry Julienne Cut Sun Dried Tomatoes. Pour in the white wine and cook for 3 minutes.

Step 4
Stir in the lemon juice, lemon zest and butter.

Step 3
Once the butter is melted, add back in the shrimp, cooked pasta, and a bit of pasta water.

Step 4
Serve the pasta and top with parsley and grated parmesan. Enjoy!
